At Tavella, fire is the way we understand cuisine
Every day, fresh fish from the market and selected meats meet the grill, where embers, time, and technique define the character of each dish.
The cuisine changes with the market, the sea, and the season, but has just one constant: a tribute to quality produce in its purest expression through fire. In the cellar, more than 800 national and international wines complete the experience.

Pablo Chirivella
Pablo Chirivella’s philosophy focuses on “the search for the origin”.
Deeply attached to his land, the traditional Valencian recipe book is the basis of his cuisine, that is expanded with products, memories and experiences of his journey.
He began cooking in Valencia, then moved to China, later to England, continued training in the Basque Country, then in Tenerife and finally, for three years, he traveled Mexico from north to south. After opening his suitcase and filling it with flavors and cultures, he came back to his origin, to Valencia, to start again in Tavella.
Today, a decade after its opening, Tavella represents the maturity of that return. It is the consolidated project of Pablo Chirivella, where he invites diners to immerse themselves, with all five senses, in his culinary memory.
Utmost respect for the environment, local quality produce, and gastronomic culture are the non-negotiable foundations of a cuisine that presents itself as cultural, solid, and identity-driven. Its roots are found in the wood, the orchard, and the sea, and its language in the grill: fire as the purest expression of origin.

Spaces
Tavella is located in Pablo Chirivella’s old family home, a century-old alquería (traditional farmhouse).
From the late 19th century to the mid-20th century, it was dedicated to agriculture; later it housed a boutique, and ten years ago, it became Tavella:


The corners of the restaurant preserve their original structure unaltered: the courtyard that welcomes you and, despite being inside the city, makes you leave it behind; the kitchen with its marble counter and glass doors; the old boutique now converted into a private dining room; or the terrace, a small hidden garden at the doorstep of the house.
A space with soul, where past and present coexist around the fire, the roots, and the table.
